Charles Darwin University Palmerston student Michael Lay is a finalist in the Young Outback Chef awards to be held in Sydney in late September.

A recently qualified chef, Michael completed an apprenticeship with the Waterfront Bistro at Darwin’s Sailing Club, studying a Certificate III in Hospitality (Commercial Cookery).

He is one of six chefs selected from regional Australia, one of whom will attend the World Association of Chefs Societies international culinary expo in Dubai in 2008.

The prize includes work experience at the prestigious Jumeirah International Hotel in Dubai.

The finalists will be placed under a week-long evaluation process, travelling to Sydney and the Hunter Valley wineries from 20 September for a thorough hands-on week of food and beverage study.

Senior lecturer in commercial cookery, T.Y. Lee said it was an excellent experience for Michael to learn from great chefs and gain considerable wine experience.

Michael said he was both excited and nervous about his forthcoming trip.

‘I know it will broaden my outlook and open my eyes, but I’ve never worked outside my family restaurant so it’s a big step,’ he said.
